Fried Greens, Rice and Eggs with Roasted Cauliflower

If you want to use all the greens you have in your fridge, courtesy of coop, this is the right recipe for you. Like I do with all my other meals, this pairs really well with rice and a fried egg (and red wine?). Its easy to make, takes about 30 minutes total, and you can adjust the level of spiciness to your needs.

 

Ingredients:

  • 3 Cabbage Leaves
  • Handful of Spinach
  • 1 Beet with Leaves
  • 1/4 Cauliflower
  • 1 Large Potato
  • 1 TBSP Cumin
  • 1 TBSP Garlic Powder
  • 1/2 TBSP Garam Masala
  • 1/2 TBSP Curry Powder
  • 1/2 TBSP Turmeric
  • 1 TBSP Garlic Siracha
  • 1/4 Clove of Garlic, Diced
  • Tofu
  • Olive Oil
  • Aluminum Foil

Recipe:

Heat up olive oil in a non stick pan put in the chopped up greens. Let it cook for about 7-8 minutes while stirring continuously.

Stab the potato with a fork and stick it in the microwave for 4-5 minutes. Carefully remove the potato and dice it up. Put it in with the fried greens.

Smash the tofu in your hand and scramble it in with the rest of the things. Put the dried ingredients, with the garlic Siracha and the diced garlic and mix thoroughly.

Put the cauliflowers in a separate bowl and add the dry ingredients along with olive oil. Mix thoroughly and spread it evenly on an aluminum pan. Bake for 15 minutes.

Fry the egg and serve!
