After kale chips became popular, every vegan blog out there started talking about black bean brownies. While black beans and chocolate may not look so appealing prior to pulsing them in your food processor, I’m sure that mixing in a couple more ingredients and placing them in the oven will make you more than satisfied. I know I was!

I have tried many black been brownie recipes and to be honest some did disappoint. Sometimes the consistency was off and at other times the chocolate flavor was just not strong enough. But the search is over! You can wow anyone with these.

Ingredients:

Makes 9-12 brownies.

  1. black beans (1 15-oz can, drained and rinsed very well)
  2. 2 tbsp cocoa powder- (add a little extra if desired)
  3. 1/2 cup quick oats
  4. 1/4 tsp salt
  5. 1/3 cup pure maple syrup or agave (Honey can work)
  6. 2 tbsp sugar (or ½ cup more of honey)
  7. 1/4 cup coconut or vegetable oil
  8. 2 tsp pure vanilla extract
  9. 1/2 tsp baking powder
  10. 1/2 cup to 2/3 cup vegan chocolate chips (A MUST)

Directions:

  1. Preheat oven to 350° F.
  2. Combine all ingredients except chips in a good food processor, and blend until completely smooth. Really blend well!
  3. Stir in the chocolate chips, then pour into a greased 8×8 pan. You can sprinkle extra chocolate chips over the top.
  4. Cook 15-18 minutes, then let cool at least 10 minutes before trying to cut.

Wait what?! Did you notice this recipe has no flour? . This must be a mistake? NOPE! They come out moist and delicious, just the way I like them!
