This is a great recipe for an easy, healthy breakfast.  Steel cut oats are chewier than regular oatmeal, giving this meal a more pleasant texture than regular oatmeal.  The banana and nuts add a great flavor, and the other ingredients are just enough to balance out the fruit and nuts without making this a sweet breakfast.  This is a simple recipe to make your morning oatmeal more interesting.



  1. 4 cups water
  2. ¼ teaspoon table salt
  3. 1 cup uncooked steel cut oats
  4. 2 ripe medium bananas
  5. 1 tablespoon packed brown sugar
  6. 2 teaspoons butter
  7. ½ teaspoon vanilla extract
  8. ¼ cup low-fat milk
  9. 8 teaspoons chopped walnuts



  1. Bring water and salt to a boil in a medium saucepan.
  2. Stir in oats and return to a boil.
  3. Reduce heat to low and simmer, uncovered, stirring occasionally, until oats are tender (about 25 mins).
  4. While oats are cooking, mash the bananas.
  5. If you haven’t already done so, you can also use this time to chop the walnuts.
  6. When oats are done, remove them from the heat.
  7. Gently stir in bananas, sugar, butter, and vanilla.
  8. Stir in milk.
  9. Serve warm, topped with walnuts.


This recipe serves four, but if you are only cooking for yourself you can save the rest of the oatmeal for other busy mornings.  The texture may be a little off after reheating, but the flavor should be the same.  Some vigorous stirring should fix most of the texture problems.
