Springtime is fast approaching, bringing with it Passover, Easter, and a craving for tropical flavors.  With regards to Passover, it’s time to start thinking about tasty, grain-free foods.  Macaroons are especially popular around this time because they are a delicious grain-free dessert.  Even if you do not keep Passover, these cookies are a great sweet treat.  Besides being kosher for Passover, they are also gluten-free!  On top of all this, they are incredibly easy to make.



  1. ¾ cups sugar
  2. 2 large egg whites, quickly whisked with fork
  3. ½ cup semisweet chocolate chips
  4. 2 ½ cups shredded coconut
  5. 1 teaspoon vanilla extract
  6. 1 pinch table salt



  1. Preheat oven to 350°F.  Have a baking sheet ready, lined with parchment paper.
  2. In a large bowl, combine sugar, coconut, egg whites, chocolate, vanilla, and salt.
  3. Dampen hands with cold water and form small haystack shapes with 1½ tablespoons of mixture.
  4. Space evenly on baking sheet and bake for 15-20 minutes, rotating half way through.
  5. Cool on rack when done.


These chewy cookies are filled with coconut, making them also a great Easter dessert or simple spring pick-me-up.  The chocolate chips are a great extra, but they can be deleted in case of allergies.  Enjoy!
