Gilly’s Corner is where delicious dreams come true. 

Whenever I go home for a break or for the holidays I always ask my family what I should bake, and I can always count on their responses. My mother will tell me to make her banana cream pie. My brother Alexander will ask me for something with extra chocolate, like his favorite chocolate cupcake with chocolate ganache filling, chocolate icing and garnished with miniature chocolate chips. My brother Sam will shrug his shoulders and then ask me about the qualities of baking soda or give me a lecture on the difference between vanilla extract and imitation vanilla extract. My dad will tell me not to bake anything, saying, “This family is fat enough!” while simultaneously stuffing four chocolate turtles into his mouth, and my sister Morgan will ask me to make her something with peanut butter and chocolate.

Since I came to Wesleyan, everytime I come home Morgan asks for one of two things- either peanut butter chocolate bars or peanut butter chocolate truffles. She has yet to figure out that these two desserts are actually made with exactly the same ingredients and that their total preperation time takes all of 15 minutes. While it may be obvious to most of you that this is an incredibly easy recipe, baking and cooking has never been Morgan’s strong point (boiling water is about the extent of her abilities), so I like to let her think I slave over these when in fact all you need is a microwave, a pan or bowl, the ingredients listed below and a little time.

On a side note, Usdan makes a version of the peanut butter chocolate bars but these are far better :)

Peanut Butter Chocolate Bars

Ingredients:

  1. 2 & ½ cups graham cracker crumbs or 12 graham crackers crushed
  2. 1 cup peanut butter (smooth)
  3. 1 cup butter melted
  4. 2 & ¾  cups confectioners sugar
  5. 2 cups semi-sweet chocolate chips

Directions:

  1. Mix together graham cracker crumbs, confectioners sugar, peanut butter and melted butter until it starts to clump together
  2. Press firmly into the bottom of a 9×13 pan
  3. Melt chocolate chips in the microwave or over a double boiler, being careful not to burn
  4. Spread chocolate over top of the crumb crust
  5. Chill for five minutes then cut into bars before the chocolate sets completely (otherwise they will be impossible to cut!)
  6. Chill until chocolate has completely set – about one hour – or until ready to serve

Peanut Butter Chocolate Truffles

Directions:

  1. Mix together graham cracker crumbs, confectioners sugar, peanut butter, and melted butter until it starts to clump together
  2. Roll into 1″ balls
  3. Place rolled balls onto a cookie sheet lined with parchement paper and freeze for about 20 minutes
  4. While freezing, melt the chocolate in the microwave
  5. Once PB balls have set, using a spoon, dip into the chocolate until completely covered and place back on cookie sheet
  6. Let chill until the chocolate has set

These bars and truffles are unbelievably easy to make and are so delicious. I hope you enjoy them as much as the Mahoney family does!
